Extruder or vacuum plodder — decide this first
If your bars will be inspected or branded, choose vacuum. Extruding without de-aeration leaves air in the bar and the defects show up after drying and stamping, not before. The price difference between an extruder and a vacuum plodder is much smaller than the cost of a rejected batch.
Die defines the bar profile
The die sets the cross-section of the bar. If you plan more than one bar shape, order the additional dies with the machine rather than later, so the head and the die are made to match and you avoid freight and downtime on a second shipment.
Consistency comes from steady feed
Extrusion quality depends on the soap arriving at a steady rate and temperature. Upstream milling and cooling that runs in surges will show up as a billet that varies in density along its length, which then shows up as bar weight variation. Fix the feed, and the extruder looks after itself.

Is an extruder cheaper than a vacuum plodder?
Yes, generally, because there is no vacuum pump, sealed chamber and associated pipework. Whether the saving is worth it depends on your product: for plain low-end laundry bars it can be; for branded retail soap it usually is not.
Can it be upgraded to vacuum later?
Not reliably. The vacuum version is a different machine, not an add-on. Decide at the quotation stage based on the product you intend to sell.
